A nutritious alternative to wheat, emmer wheat is an ancient crop rich in micronutrients, minerals, and vitamins. Emmer wheat flour, also known as Khapli atta, is rich in dietary fibre and contains low gluten.
How to Use
Step 1
Khapli Wheat rotis are very easy to make, rich in fibre and protein and gluten-free! Here's how to make simple and delicious Khapli Wheat roti/flatbread: Ingredients 1/2 cup khapli wheat (emmer wheat flour) 1/2 cup water desi ghee (clarified butter), as needed
Step 2
Add some water to a nonstick pan and keep on low-medium heat. Remove from heat once it has reached a rolling boil. Mix in the flour until it absorbs the water and creates a moist dough. Place a lid on top and leave for five minutes.
Step 3
When the dough is soft and smooth, transfer it to a kneading surface and knead it for 4–5 minutes. As necessary, moisten your hands with water and oil.
Step 4
Make two equal parts of the dough. Turn on the medium-high heat in a skillet.
Step 5
One portion of dough should be taken, rolled into a ball, flattened, and then well coated in dry flour.
Step 6
With a rolling pin, flatten the dough ball into a thin roti, adding dry flour as necessary.
Step 7
The roti should be placed on the heated griddle and cooked for 15-20 seconds before being turned over and cooked for roughly a minute on the other side.
Step 8
Cook the opposite side of the roti after another flip. Transfer the roti to a platter once both sides are thoroughly cooked, then top with a little desi ghee.
Step 9
Prepare the remaining rotis in the same manner, and serve with your favourite curry.
