Amaranth is an ancient super seed that was once a staple of the Aztecs and Mayans. Often referred to as a pseudo-cereal, this little seed beats the nutrition of multiple grains in the category of calcium, iron and protein. This little bud is a powerhouse of protein, antioxidants, essential minerals and is gluten free! A common fasting ingredient in India, Amaranth can be used as a rice and had with stir fries or salads, can be added to soups (for thickening), to baked desserts (like vegan cakes!). With amaranth flour or amaranth atta, many foods can be prepared which are healthy and yummy too.
