How to Use
Step 1
In the bronze tadka pan, heat the oil over medium or medium-low heat.
Step 2
Add the whole spices, including bigger parts such as cinnamon sticks, as well as small beans or lentils.
Step 3
Add the onions, shallots, and ginger immediately if you want them cooked and crisp. Remove the tadka pan from the heat and, if desired, season with ground chilli powder or chilli flakes. The residual heat is sufficient to extract the taste. Add the tadka to your dal, curry, or any other food you're making.
